AKA Braised Beef Shanks
Ingredients
- (3-4 lbs) HWFF Beef Shanks
- (2 Tbsp) HWFF Pasture Pork Lard
- (1 Large) Onion
- (2 cloves) Garlic, finely chopped
- (2 cups) HWFF Beef Broth
- (1 cup) Tomatoes, crushed
- (1 cup) Water
- (1/4 cup) Balsamic Vinegar or Apple Cider Vinegar
- (2 Tbsp) Dried Mustard
- (1/2 tsp) Thyme
- (1 tsp) Sage
- (1/2 tsp) Sea Salt
- (1 tsp) Black Pepper
Directions
- Preheat oven to 325F or 300F for a cast iron dutch oven.
- Pat meat dry to reduce spattering when frying. Sprinkle generously with salt and pepper.
- Melt HWFF pastured pork lard in a heavy skillet over high heat.
- Add HWFF beef shanks. Cook without turning until well browned (approx. 3-5 minutes). Turn and repeat for other side. Remove meaet from skillet to a 7 quart dutch oven (I prefer cast iron).
- Lower heat to medium, add a little more lard. Add onions, celery, and garlic to skillet. Cook, stirring often until the vegetables are fragrant and slightly browned.
- Add HWFF Bone Broth, tomatoes, vinegar, mustard, thyme, sage, sea salt and pepper. Bring to a boil. Lower heat and simmer uncovered for 5 minutes. Pour over meat.
- Cover and cook for 3-31/2 hours or until meat detaches from the bones.
- Serve immediately with your favorite side dishes.
