A slightly spicy Greek seasoned ground lamb that is fragrant with coriander, orange zest and juice.
Ingredients
- (1 lb) Ground Lamb
- (1/4 cup) Onion, chopped
- (1 clove) Garlic, chopped
- (2 tsp) Olive Oil
- (1 tsp) Coriander, ground
- (1 tsp) Sea salt
- (1/2 tsp) Ground Cumin
- (1/2 tsp) Black Pepper
- (1/2 tsp) Thyme
- (1 Tbsp) Orange Zest, grated
- (1/4 cup) Fresh Squeezed Orange juice
- For a more classic flavor substitute Retsina or Metaxa (Greek Brandy) for the orange juice.
Directions
- Saute the onion and garlic in the olive oil over low heat until softened.
- Refrigerate for 30 minutes.
- Combine salt, seasonings, orange zest and juice.
- Combine cooled onion, garlic mixture and HWFF ground lamb.
- Mix well to combine all ingredients thoroughly.
- HINT: I knead it like I would bread for at least one minute after everything is combined.
- Shape into patties or meatballs.
- Cook to an internal temperature of 160F.
