Loukanika
A slightly spicy Greek seasoned ground lamb that is fragrant with coriander, orange zest and juice.

Ingredients

  • (1 lb) Ground Lamb
  • (1/4 cup) Onion, chopped
  • (1 clove) Garlic, chopped
  • (2 tsp) Olive Oil
  • (1 tsp) Coriander, ground
  • (1 tsp) Sea salt
  • (1/2 tsp) Ground Cumin
  • (1/2 tsp) Black Pepper
  • (1/2 tsp) Thyme
  • (1 Tbsp) Orange Zest, grated
  • (1/4 cup) Fresh Squeezed Orange juice
  • For a more classic flavor substitute Retsina or Metaxa (Greek Brandy) for the orange juice.

Directions

  • Saute the onion and garlic in the olive oil over low heat until softened.
  • Refrigerate for 30 minutes.
  • Combine salt, seasonings, orange zest and juice.
  • Combine cooled onion, garlic mixture and HWFF ground lamb.
  • Mix well to combine all ingredients thoroughly.
  • HINT: I knead it like I would bread for at least one minute after everything is combined.
  • Shape into patties or meatballs.
  • Cook to an internal temperature of 160F.
